We're welcoming the Redmond Farms Milk Truck every Thursday from 11 am - 2 pm! In the spirit of learning more about new topics, we're also excited to partner with them so they can share expertise in all things dairy. We're hosting two workshops in the coming weeks, right here at the farm. There are a limited number of seats for each one, so get to our website early to reserve your spot! On February 21, Jed will be hosting a discussion about raw milk, the process of producing clean milk, and the risks and benefits associated with consuming raw milk. He'll talk about how Redmond Farms produces its locally enjoyed products. Then, if you haven't gotten enough dairy yet (because really, can you ever have too much?), we're hosting LeRoy on February 28 for a class on making your own butter and cheese. The taste of fresh homemade cheese and butter truly can't be matched, and the process is surprisingly straightforward. Registration for this class even includes samples, so you'll enjoy a little example that you can recreate at home.⠀⠀⠀⠀⠀⠀⠀⠀⠀

Spinach is a cool-season crop and belongs to the Goosefoot family along with swiss chard and beets. Spinach is low in calories, and is a good source of Vitamin C, Vitamin A, and is rich in minerals, especially iron.

Arugula - one bag

In a serving bowl, drizzle the arugula with the oil, squeeze in the lemon juice, and sprinkle with salt and pepper. Toss until well mixed and taste for seasoning. Shave thin pieces of Parmigiano, or another cheese, over the top.

Oro Blanco - 3

We are so excited that we were able to get Oro Blanco's this year. They are one of Farmer Luke's most favorite fruit and we think you are going to love it as well. The secret that we want to share with you is how to eat an Oro Blanco. You can always cut it open and eat it like a grapefruit but the membrane is really sour and the sweet flesh is hidden inside. Watch this video that Farmer Luke made to teach you how to eat it.
